What is phospholipid?

   磷脂,也称磷脂类、磷脂质,是指含有磷酸的脂类,属于复合脂。磷脂组成生物膜的主要成分,分为甘油磷脂与鞘磷脂两大类,分别由甘油和鞘氨醇构成。磷脂为两性分子,一端为亲水的含氮或磷的头,另一端为疏水(亲油)的长烃基链。由于此原因,磷脂分子亲水端相互靠近,疏水端相互靠近,常与蛋白质、糖脂、胆固醇等其它分子共同构成脂双分子层,即细胞膜的结构。

       

市面上哪些食物含有磷脂?

在蛋黄、大豆、鱼头、芝麻、蘑菇、山药和黑木耳、谷类、小鱼、动物肝脏、鳗鱼、赤腹蛇、眼镜蛇、红花籽油、玉米油、向日葵等食物中都有一定的含量。这些食物中均含有一定量的卵磷脂,被誉为与蛋白质、维生素并列的“第三营养素”,然而了解的人却很少。

磷脂的好处

磷脂是脂肪大家族的一员、磷脂对于大脑的营养却是不可缺少的一分子。

最常见的磷脂是卵磷脂(磷脂酰胆碱)、磷脂酰乙醇胺和神经鞘磷脂。磷脂主要存在于脑、神经组织、骨髓、心、肝及肾等器官中。是细胞原生质的固定组成成分。在众多的磷脂组分中,主要是磷脂酰胆碱在起着众多的生理作用。磷脂中的磷脂酰胆碱是构成体内神经传递物质乙酰胆碱的前体物质,是神经元之间传递信息的一种最主要的“神经递质”。

磷脂可以强化脑细胞,健脑益智、防止脑衰退。人的大脑30%是卵磷脂、是细胞的守护神、是生命活力的基础物质。卵磷脂进入大脑后可以转化为一种神经传到的物质“记忆素”、也就是乙酰胆碱。乙酰胆碱含量越高、记忆力就越强。卵磷脂具有增强记忆的独特功效、还可以营养脑细胞、带动脑细胞的正常活动。因此家长们再给中高考的学生们准备饮食的时候应多准备一些富含卵磷脂的食物、以带给大脑足够的营养。

磷脂还具有改善体内代谢,保持血管畅通;防止动脉硬化,保护心脏;降低血糖,保护肝脏等作用,在这里就不一一细说了。

烹调富含卵磷脂食物的注意事项:卵磷脂不耐热,活性在25摄氏度左右最有效,超过50摄氏度后其活性就丧失了。

磷脂的不同

大豆磷脂是从生产大豆油的油脚中提取的产物,是由甘油、脂肪酸、胆碱或胆胺所组成的酯,能溶于油脂及非极性溶剂。由其他原料提得的则分别称为花生磷脂、菜籽磷脂、蛋黄磷脂等。磷脂类是由众多的含磷化合物所组成,共有近40种,其中最主要是磷脂酰胆碱。但在习惯上(包括商业上)往往将这类磷脂统称为“卵磷脂”。

大豆卵磷脂是在制作大豆油过程里面产生的一个副品,没有任何添加的大豆卵磷脂是棕黄色蜡状固体,具有较强的吸水性,吸水之后会变成棕黑色胶状物。大豆卵磷脂主要成分有卵磷脂、脑磷脂和心磷脂,非常容易被氧化,所以在保存上面具有较高难度。(蛋黄卵磷脂主要是药用级)

磷虾油含有高浓度的磷脂,磷脂由于一端亲水,一端亲油,所以具有极强的乳化性,可以完全分散于水溶液中。南极磷虾油是目前自然界中唯一以磷脂型态结合ω-3(EPA、DHA)和多样性超强抗氧化物(磷脂型虾青素Astaxanthin)的分子结构,南极磷虾油中的EPA和DHA含量十分丰富,通常以ω-3磷脂的形式存在。其中,ω-3脂肪酸大部分附着于磷脂上,并能与水相混溶,使其成为一种生物活性复合分子,能够直接被小肠吸收,增加了生物利用度。就组织吸收率和生物利用度而言,磷脂型ω-3脂肪酸要比甘油三酯型ω-3脂肪酸效果更佳。科学家研究表明,南极磷虾油所含生物活性物质的生物利用度高达95%~98%,南极磷虾油富含天然虾青素,且南极磷虾油中富含的虾青素为高活性虾青素,抗氧化能力更为出色。国内外研究表明,虾青素能够增强淋巴细胞的功能,增加IFN-γ和IL-2的分泌,能够增加机体抗体的产生,增强免疫应答。
